Rolled oats cookies

Ingredients:

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup dried fruit (raisins, cranberries, etc.)
  • 1/2 cup chocolate chips (optional)

Instructions:

Preheat the Oven:

  • Preheat your oven to 350°F (175°C).
  • Line a baking sheet with parchment paper or a silicone baking mat.

Mix Dry Ingredients:

In a medium bowl, whisk together the rolled oats, flour, baking soda, and salt.

Cream Butter and Sugars:

  • In a large bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy.

Add Egg and Vanilla:

  • Beat in the egg and vanilla extract until well combined

Combine Wet and Dry Ingredients:

  • Gradually add the dry ingredient mixture to the wet mixture, mixing until just combined.

Add Mix-ins:

Fold in the nuts, dried fruit, and chocolate chips if using.

Scoop Dough:

  • Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake:

  • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underdone, but they will firm up as they cool.
